Thank you Ron and Pam for hosting the (almost) end of sailing season dinner last night. Great food, great company, sad to be finishing up our sailing together for another year. It was fun!
I've attached the recipe for the Rice Salad. It anyone's heading over to T&T, let me know, I'd like a 5lb bag of brown rice mix too!

Linda’s Rice Salad (made by Kathleen)
2 cups brown mixed rice (from TNT Asian grocery store near Cherry Beach, in a 5 lb. bag).
Rinse well and cook 4 cups of water to 2 cups of rice.
Sometimes this rice is sticky. If this happens you can rinse it with cold water, drain well.
2 cups of celery chopped or sliced Dressing:
1 cup of green onion or onion to taste 1/4 cup of olive oil
1 cup of almonds toasted 1 or 2 tbsp of sesame oil
and roughly chopped 1/4 cup cider vinegar
2 or 3 mangos 1/3 cup tamari (soy sauce)
Make up the dressing and taste. It should be salty and vinegery. Mix together and let sit
in fridge. Then taste again – the rice absorbs the strong tastes and you may have to add
more vinegar or soy etc. to balance it out.
